Food and Protein Bar Recipe

Living in a different country has allowed me to learn so much!  We have been stretched in many ways.
One fun topic of conversation, experience, and learning has been food.  We have enjoyed tasting new foods as well as finding ways to create the food we enjoy with different ingredients.  We were very pleased to discover that although peanut butter is very difficult to find in France, peanuts are not.  So, using Eric's Vita-Mix, we have begun to make our own peanut butter!  It is so tasty and inexpensive, and of course, no preservatives!

Another food we enjoyed in the US was protein bars.   Well, the protein bars in France are small, expensive and really not very good at all.  So I went to work to find a way to make our own.  The following recipe is the tasty and nutritious result!

Ingredients:
1 cup chopped peanuts
1/3-1/2 cup ground seeds (I used flax)
1 cup chopped dried raisins
1 cup shredded coconut
6 scoops (1 scoop = about 1/3 cup) whey protein powder (I used 3 scoops of vanilla and 3 of chocolate powder from Costco)
3/4 cup natural peanut butter
1/4 cup Nutella
1 cup coconut oil (melted)
1 T vanilla extract
2 T Agave or honey

Topping:
Dark chocolate (I used 70% cacao)
1 cup thinly slivered almonds

Directions: Mix together all the dry ingredients in one bowl and all the wet ingredients in another.  Make sure the chopped raisins are separated.  Mix together the dry and wet combinations.  Pour it into a 12 inch flat cake pan.  Press the mixture into the pan and smooth the top and edges.  Refrigerate for one hour.  After one hour, melt the chocolate and spread it over the top of the hardened mixture.  Quickly sprinkle the almonds over the chocolate before the it hardens, so they will stick.  Using a pizza cutter, cut the mixture to form the size bars you want.  Return the pan to the refrigerator for at least one more hour.  After the mixture hardens I like to remove each bar and wrap it with Saran Wrap so they are easy to take on the go.  The bars need to be stored in the refrigerator.  The individually wrapped bars can also be frozen to enjoy at a later date.
